Bash-it-about Chicken

Then get them involved in this fun, chicken dish that’s quick, easy, healthy, tasty and FUN! My kids always love helping to make this one. Any excuse to bash a piece of chicken with a rolling pin!

in a chicken casear salad
with a baked potato and salad
scattered on top of any veggie dish like egg fried rice or chilli

Bash-it-about Chicken
Ingredients
Food you'll need
- 4 chicken breasts
- olive oil
- salt and pepper
Stuff you'll need
- baking paper
- rolling pin (and muscles!)
- frying pan
- tongs
- chopping board
Instructions
How to make it
- Place a chicken breast in the middle of a piece of baking paper and fold the paper over the chicken.
- Take the rolling pin and bash the chicken to flatten it so that it's the same width all the way around and is about twice its original size.
- Bach the rest of the chicken breasts as well.
- Rub the chicken with oil in both sides and season with some salt and pepper.
- Add some oil to your frying pan and heat it to a medium to high heat.
- Add the chicken breasts - you want to hear a sizzle when they go into the pan.
- Cook the chicken on both sides for a couple of minutes. Use tongs to turn the pieces over. You might fit only one or two chicken breasts in the pan at a time.
- Pop the chicken onto a chopping board and cut into it to check that it is white all the way through. Chop it into slices - yum!
How to serve it
- In a burger bun with lettuce and tomato
- With pasta and Cleverest Tomato Sauce
- With mashed potatoes, coleslaw and broccoli
- Leftovers can be used in sandwiches or popped into lunchboxes.
