Chocolate raspberry coconut bites for Valentine's Day

This healthy child friendly recipe is a perfect Valentine treat. Or have it any time of the year!

Ingredients

Chocolate raspberry bites
  • 200 g frozen raspberries
  • 140 g desiccated coconut
  • 2 tbsp chia seeds
  • 2 tsp vanilla essence
  • 2 tbsp maple syrup or chicory root syrup
  • 250g dark chocolate (eg. mix of 70 and 85%)
  • tblsp coconut oil

Instructions

To make the filling
  1. combine the first 5 ingredients in a large bowl and combine well
  2. shape into hearts using a cookie cutter or roll into balls if you don't have a cookie cutter
  3. pop the hearts onto a baking paper lined tray and into the freezer for 30 minutes
  4. melt your chocolate
  5. add the coconut oil - this helps keep the chocolate smooth and shiny
  6. take the raspberry coconut hearts out of the freezer and dip in the melted chocolate
  7. pop into the fridge to set.
  8. Enjoy!
  9. Best kept in the fridge

Options

- leave the chia seeds out if desired

- add more or less maple syrup or chicory root syrup as desired

- sprinkle with sea salt at the end if desired
