Carrot cake powerballs

These Christmas power balls are fun to make, very cute and full of energy for Santa (or kids!)
I’ve made these with hundreds of children over the last few weeks - slowly trying to change kids attitudes to what constitutes a ‘treat’ - focusing on the ‘energy’ they’ll give Santa (and themselves!)
In all my kids classes, I examine each ingredient with them so that they know what it is and where it comes from. Coconut is like snow from the North Pole and the carrots have come directly from Rudolph’s stash!

Carrot Cake Power Balls - Healthy treats for Santa!
These power balls are packed full of carrots and other whole food ingredients! Decorate them with chocolate, pretzels and sweets to look like reindeer or leave them plain as a lunchbox or after-school snack!
Ingredients
- 🎅🏻1 medium carrot - peeled and chopped in 3
- 🎅🏻 1 cup oats
- 🎅🏻 2 cups dates - stoned
- 🎅🏻 1 cup shredded coconut
- 🎅🏻 tsp vanilla essence
- 🎅🏻 tsp cinnamon
- 100g dark chocolate
- pretzels (2 per 'reindeer')
- red sweets like smarties
- white chocolate chips (2 per 'reindeer')
Instructions
- Blend everything well. You might have to turn the blender on and off a couple of times to scrape everything down
- Take out a small handful, squeeze together tightly to ensure the ball holds it's shape. If it is crumbly, add an extra date or two and blend again
- Roll into smallish balls. Kids will tend to either roll enormous powerballs or teeny tiny ones - I've had it all!
- These are ready to eat now or you could upgrade them for Christmas!

- 🧑🎄to upgrade your balls - dip in dark chocolate, add white chocolate chip eyes, pretzel 🥨 antlers and a coloured sweet (remember - not all reindeer have red noses - so any colour will do!).

- Give your powerballs a Christmas twist!
- Melt the dark chocolate - gently in the microwave or using the 'bain marie' method. Get a plate ready with some baking paper
- Dip the power balls in the dark chocolate. Use a fork to minimise the mess. Pop the coated powerball on the baking paper
- Before they dry - you need to decorate! Add 2 white chocolate chips for eyes. Dip the end of a teaspoon into any leftover melted dark chocolate and make some pupils on the chocolate chips!
- Add 2 pretzels as 🥨 antlers and a coloured sweet as a nose (remember - not all reindeer have red noses - so any colour will do!).
