Powered-up Energy Balls

You will not believe the magic ingredient in these yummy power balls that the kids can make.

It is none other than wheat biscuits or Weetabix - the iconic breakfast cereal!

What we love about these energy balls is that the kids can eat them for a breakfast on the run or pop in the lunch boxes as they are nut free. Or… great as an after school snack!

They are so simple to make and the kids will love how the chia seeds absorb all the water!

Ingredients

Food you
  • 1 tbsp chia seeds
  • 4 Weetabix or wheat biscuits
  • 1 tbsp coconut oil
  • 8 large pitted dates (dates with no stones)
  • 1/4 cup cacao powder (plus extra for rolling)
  • 2 tbsp desiccated coconut
  • 1 tsp cinnamon
Stuff you
  • 2 small bowls
  • measuring spoons
  • blender
  • child-safe knife
  • chopping board
  • plate

Instructions

How to make it
  1. Put the chia seeds into a small bowl. Add 4 tablespoons of water to the seeds and leave to one side (watch the magic happen!)
  2. Meanwhile, break your Weetabixes in two and throw them into the blender.
  3. Measure out the coconut oil into a bowl and microwave it until it's melted: about 30 seconds to 1 minute.
  4. Chop the dares in two and add the,, the cacao powder, dessicated coconut and the melted coconut oil to the blender.
  5. Add the chia seed mixture (it should be a gooey gel now).
  6. Blitz everything together for about 30 seconds, then scrape down the sides and blend again. Keep doing this until everything is well mixed.
  7. Take small amounts in your hands. Squeeze together tightly and then roll between your two hands to form a ball. If you wet your hands first, it can stop the mixture sticking to your fingers.
  8. If they are not sticking together, add another date or two and blend again as this will help everything stick together.
  9. Sprinkle about a tablespoon of cacao powder onto a plate and on top of that a teaspoon of cinnamon.
  10. Roll the balls in the mixture and pop in the fridge for 20 minutes before gobbling them up. These are great for your lunchbox!
