How to make healthier rocky rocky with the kids!
Try this easy, child-friendly recipe for healthy rocky road as an alternative to the standard rocky road recipe.
It uses protein packed puffed quinoa, fresh pomegranate seeds, toasted seeds and dark chocolate for a nutrition-packed snack.
How to make healthier rocky rocky with the kids!
Ingredients
- seeds of 1 pomegranate
- cup and half of puffed quinoa
- half cup desiccated coconut
- half cup of sunflower seeds
- cup or two of dark chocolate chips
Instructions
Top tip - toast your seeds on a dry pan for extra crunch and flavour
- Add the seeds, puffed quinoa, toasted seeds and coconut into a large bowl.
- Melt the chocolate and add to the bowl.
- Mix everything well.
- Pop into a lined tin. Press down well with the back of a spoon.
- Refrigerate for 2 or more hours.
- Slice into squares and enjoy!
Customise your whole food, healthier rocky road. Add any (or all!) of the following wholefoods;
- - popcorn (good for imitating marshmallows kinda!)
- - nuts - peanuts, cashews, hazelnuts, pecans …
- - pumpkin seeds, chia seeds
- - dried fruit like goji berries, raisins, chopped dates
- - fresh fruit like blueberries, raspberries (will affect shelf life)
